This sausage and baked bean casserole is one of my favourite mid-week dinners. It’s a meal which is eaten up by the whole family and has been a favourite of mine since I was a child. There’s something really comforting about a warm sausage casserole with creamy mashed potato and lots of buttered bread – and the addition of paprika, tomato and peppers makes this dish completely different to traditional bangers and mash.

Make this simple sausage and baked bean casserole on your hob, in one pan, for easy cleaning up and a quick and easy meal.

You can choose any type of sausages you’d like for this recipe – making it very adaptable and one which is often possible to make with few ingredients in the house! I like to use Lincolnshire or caramelised onion sausages when I make it, but it’s also lovely with chipolatas or even heck chicken sausages.

1. Begin by preparing your ingredients – cut the onion and pepper into bite-sized pieces

2. Next, heat oil in a large frying pan to a medium heat

3. Then, tip in the packet of sausages and stir to coat in the oil

4. Cook the sausages without turning them over until one side is browned (usually 1-2 minutes, depending on the heat of your pan)

5. Then, once one side of the sausages is browned – add in the chopped onions and stir to coat in the oil of the pan, turn the sausages so an uncooked side is facing down/touching the pan – to brown that side now

6. Continue to cook the sausages and onions, until each side of the sausage is browned to your liking and the onion is translucent and beginning to caramelise

7. Now, add in the chopped peppers, paprika, thyme, garlic and sugar

8. Stir to cover everything and cook for around 30 seconds so the garlic can cook slightly

9. Then, add in the Worcestershire sauce, tin of beans and tin of chopped tomatoes

10. Pop the lid on, and allow to cook on a low heat for a further 10 minutes to thicken the sauce a little

11. Now, it’s ready to serve! Enjoy with mashed potato and sliced, buttered bread

A family-friendly, easy-to-make sausage and baked bean casserole. This recipe is the perfect meal for colder evenings, made easily on the stovetop.

Ingredients

  • 1 onion
  • 1 pepper
  • A pack of your favourite sausages (6 or 8, or 12 are fine for this recipe)
  • 1 tsp garlic puree (or 1 fresh, crushed clove)
  • 1 tbsp Tomato Puree
  • 1 tsp paprika
  • 1 tsp thyme
  • 1 tbsp Worcestershire Sauce
  • 1 tsp sugar
  • 1 400ml tin baked beans
  • 1 400ml tin chopped tomatoes

Instructions

  1. Begin by cutting the pepper and onion into bite-sized pieces - choose the size dependant on your families preferences
  2. Then, heat some oil in a large frying pan with sides
  3. Add in the sausages - stir to coat in the oil and cook until one side is browned to your liking
  4. Once one side of the sausages is browned, add the onions into the pan, and stir the sausages so an uncooked side is facing downwards (so that side can brown)
  5. Cook the sausages and onions in the pan until each side of the sausages are cooked to your liking and the onions are nicely browned too
  6. Then, add in the chopped pepper, sugar, garlic puree, tomato puree, paprika and thyme - stir to coat the sausages and onions and allow to cook for a minute
  7. Finally, stir in the tin of tomatoes, tin of beans and tbsp of Worcestershire sauce
  8. Pop a pan on the lid, and allow it to cook on low for a further 5-10 minutes - until thickened a little an hot throughout
  9. Then, it's time to serve! We love this with mashed potato and a slice of white, buttered bread

Notes

You can use any sausages you like, and really add as many as you like - I do either 6 or 8.

You don't need to add in the pepper if your family don't like peppers.
