TL;DR
Portobello mushrooms are grown out of button mushrooms. They taste very umami and somewhat earthy.
They are also much fleshier and resemble in consistency pan-fried King oyster Mushrooms.
This particular recipe aims to highlight all the beautiful flavors of Portobello mushrooms.
My recipe achieves that by deglazing the sautéed mushrooms with wine. Additionally, fresh thyme complements the aroma.
I would say, it tastes like a walk in the forest.
Ingredients
For this particular portobello mushroom side dish, you won't need that many ingredients.
The mushroom is going to lend the dish the flavors it requires, and you certainly don't want to mask these wonderful mushrooms with anything else.
- Portobello Mushrooms — sliced. The younger, the better! Look out for hyper fresh, blemish-free, mushrooms.
- Butter — Unsalted or Salted. If you use salted butter, decrease the salt quantity.
- Onion — sliced. You can use yellow, white, red or purple onions. Also, mild shallots are acceptable.
- Black Pepper Ground
- Garlic Cloves — pressed or finely chopped
- Saltto taste
- White Wine — Pick a wine that you like. I like a sweet Moscato wine, but a dry wine is ok too. I encourage you to experiment with white wines!
- Thyme — Fresh and a few sprigs. Dried thyme isn't the same, but if you can't get fresh thyme, use dried one instead.
To make this Vegan, switch the butter with olive oil.
How to sauté the mushrooms?
Step 1
Prep all ingredients.
Sauté onion slices in a skillet, and then garlic and mushrooms
Cook the mushrooms down until they lose some liquids and reduce size.
Step 2
Season and Pour in your white wine to deglaze.
Step 3
Add the thyme sprigs.
Stir cook and continue to cook down mushrooms.
Step 4
Cook until the liquids have been absorbed or dissolved.
Serve hot.

Ingredients
- 2 Tablespoon Butter salted or unsalted
- 1 Onion sliced
- 9 Ounces Portobello Mushrooms sliced
- ¼ Teaspoon Black Pepper Ground
- ½ Teaspoon Salt to taste
- 2 Garlic Cloves pressed or finely chopped
- ⅓ Cup White Wine your favorite
- A Few Sprigs Thyme Fresh *see Notes

Instructions
Heat up a skillet with the butter. Wait for it to melt.
2 Tablespoon Butter
Add in your sliced onions. Sauté the onions translucent.

Stir in all the sliced portobello mushrooms. Cook them so that they reduce and sauté gently.
9 Ounces Portobello Mushrooms
Season with ground pepper, salt and chopped or pressed garlic.
¼ Teaspoon Black Pepper Ground, ½ Teaspoon Salt, 2 Garlic Cloves
Once the mushrooms have reduced in size, pour in the white wine and keep on high to medium heat. Stir, cook for 1–2 minutes.
⅓ Cup White Wine
Add the Thyme and reduce further on slow heat until all the liquid is gone.
A Few Sprigs Thyme Fresh
Serve hot as a side dish with beef steak, roasted chicken, turkey, pork chops, poached salmon or vegetarian meatless meals. See the suggestions in the post.
Notes
You can use dried thyme too or omit it altogether; however, fresh thyme really adds value and flavor to the portobello mushrooms.

Serving Ideas
I think the best way to enjoy this side dish is by pairing the sautéed portobello mushrooms with a meat dish.
Serve the portobello fry with chicken, beef, veal, pork, or even fish.

Storing
In case you are left with some leftovers, you can pack them into an airtight container in your fridge.
The cooked mushrooms keep well for 3 days at least and because they taste rather neutral, you are free to serve them with a large array of meals.
I like to store my cooked sautéed Portobello mushrooms in a rectangular glass container, like the ones you get at IKEA.
That way you can stack them in your fridge, saving space, and you can see the food so that you don't forget about it.
The best part is, that the boxes can be used to reheat the food in the oven or microwave, without you having to transfer the content.
